Traditional Chinese Spring Rolls

I have always loved a good spring roll, and now as I grow older, I appreciate the vast array of flavours and styles of different spring rolls from around the world.

This recipe is a traditional Chinese spring roll as my mother would have made it. While the ingredients are nothing extravagant, it is the attention to detail and the care that made it a great first experience.

  • 1. Spring roll pastry wrappers: can buy at local grocery stores.
  • 2. Gather the fillings
    • Pork: minced - 7oz
    • Carrots: grated - 2cups
    • Bean sprouts - 2 cups
    • Cabbage: shredded - 2 cups
    • Scallions: chopped - 2 stalks
    • Mung bean vermicelli: cut into short sections - 2 cups after soaking
    • Eggs: to combine everything - 2
    • seasoning
      • Sesame oil - 1 tsp
      • Salt - 1/2 tsp
      • Pepper - 1/4 tsp
  • 3. Mix the fillings in a bowl
  • 4. Place mixed fillings on the pastry wrapper: fillings uncooked
  • 5. Wrap the pastry
  • 6. Fill pot with neutral flavour oil: like canola and vegetable oil
  • 7. Place spring rolls in the pot: when the oil reaches 180°C/350°F
  • 8. Flip Spring rolls to ensure even crisp
  • 9. After 4-5 minutes in the pot: they should be ready

Now you can enjoy your own traditional Chinese spring rolls. For a vegan choice, just remove pork from the fillings list.

Cardiff Lake Trail off Cardiff Lake springs rolls at a picnic

One time me and my family went out to the Cardiff Golf & Country Club, but we were early so we decided to walk on the trail and find a place to have the spring rolls my mother made for lunch. So, we found a picnic spot on a trail off Cardiff Lake. To find this spot, you head north of Edmonton and head towards Morinville. When you are in Hwy 2, you turn right off on to Cardiff Rd, which is just before a place called South Glens. You drive through the hamlet of Cardiff and turn right onto Range Rd 250A. You drive past the golf club until you see a parking place that brings you to a trail around the lake. You head south on the trail and go to the corner that meets Cardiff Lake.
